These Little Cheesecakes Make Great Individual Desserts (Ezine Ready)

INDIVIDUAL PEANUTTY CHEESECAKES
2/3 cup Graham cracker crumbs
2 tbsp sugar
2 tbsp melted butter
Preheat oven to 325 degrees.
Line 12 (2 1/2-inch) muffin cups with paper liners; set aside.
In a small bowl mix the cracker crumbs, sugar, and melted butter. Press 1 level tablespoonful of the mixture into the bottom of each of the prepared muffin cups; set aside.
11 ounces cream cheese, softened
1/2 cup sugar
1 tsp vanilla extract
1/2 cup milk
2 eggs
In a mixer bowl combine the cream cheese, sugar, and vanilla; beat until smooth and creamy. Add the milk and eggs beating just until blended; set aside.
1/2 cup semisweet chocolate chips
Melt the chocolate chips in a double boiler over hot water. Gradually add 1 1/2 cups of the cream cheese mixture, mixing until smooth.
1/4 cup peanut butter
Add the peanut butter to the remaining cream cheese mixture and beat at low speed just until blended.
Layer the peanut butter mixture and the chocolate mixture in the muffin cups over the crust. Fill the cups almost full.
Bake at 325 degrees for 20 to 25 minutes or until set. Remove to wire rack to cool then chill in refrigerator.
To serve, peel of the paper and place cheesecakes onto serving plates. Garnish with whipped cream and chopped peanuts, if desired.
STACKED PEANUT BUTTER-CHOCOLATE FUDGE
1 1/2 tsp butter (not margarine!)
2 2/3 cups milk chocolate chips
1 cup peanut butter, divided in half
2 tbsp shortening, divided
2 2/3 cups white chocolate chips
Use foil to line a 9 x 13-inch pan; butter the foil and set aside.
In a heavy saucepan over low heat, melt the milk chocolate chips, half the peanut butter, and half the shortening. Stirring constantly, cook until smooth. Pour into the prepared pan. Refrigerate until firm.
Meanwhile, in another heavy saucepan over low heat, repeat the process with the remaining peanut butter, shortening, and white chocolate chips. Spread this layer evenly over the firmed chocolate layer. Refrigerate for around 30 minutes until firm.
Use the foil to lift fudge from the pan. Gently peel off the foil and cut into squares.
Yield: approximately 2 lbs of fudge.

Green beans three ways (Ezine Ready)
In the old days, Friday was without question, a day where there was no meat in any meal, breakfast, lunch or dinner. On the calendar on the pantry wall, each Friday was noted by the image of a fish.
In my childhood to eat meat on a Friday was nothing less than a mortal sin and a matter of confession on Saturday. A bit of online research suggests that the gravity of meat eating varies from time to time and theologian to theologian. It seems that hair splitters even measured the gravity if sin according to the quantity of meat digested. According to some sources, the origin of prohibition of eating flesh meats goes back to the earliest Christian traditions. It would seem that to consume flesh and blood on the day that Jesus was crucified was something of an affront of his death. Other sources suggest any number of other origins. Whatever the historical foundations, for American Catholics, Friday meant no meat. This restriction prompted any number of compensating recipes from Friday pancake dinners to Mrs. Paul’s fish sticks to very traditional Italian American fare such as pasta fazool (pasta e fagioli)usually made with ditalini and cannellini beans, or pasta cheech (pasta e cecci) ,made with shells and cick pease. We never liked the dried chick peas so my mother substituted green peas. But there were also other Friday bean dishes, sometimes served as sides to the fish sticks.
For ease of presentation I have put three of these bean dishes together here. Two require string beans and the third takes lima beans. In winter you can use frozen beans. For my recipe today, I was lucky to find fresh string beans at this morning’s Farmers’ Market. The lima beans I use are frozen. On this page the crushed tomatoes are cooked to the dish. Traditionally, the sauce would have been a left over and ready to go from a previous marinara.
Of course, no one observes meatless Friday anymore. But these recipes for bean dishes go well beyond Friday. My girls loved them as sides with veal or chicken cutlets where they make a perfect match. Beans with tomatoes or potatoes and onions are a rich a satisfying side dish. These recipes highlight the beauty of Italian American cooking where the simplest vegetable is enhanced and enriched by the addition of the simplest ingredients. For ease of description I set out three variations. Normally, there would only be one of these three. What I find curious is that I have never seen these been preparations in any restaurant, either in Italy or in the States. These are recipes that descend from tradition.

Premio Sweet Chicken Sausage with White Beans, Roasted Vegetables and Polenta
Ingredients:
• 14 oz. Sweet Chicken Sausage
• 2 cans white beans
• 4 Roma tomatoes split lengthwise
• 1 large red onion
• 8 whole shallots, peeled and quartered
• 1/2 cup onion, chopped
• 4 cloves garlic, chopped
• 4 anchovies, mashed, or 2 tablespoons anchovy paste
• 3 tablespoons tomato paste
• 1 cup dry white wine
• Olive oil, salt and pepper
• 1 Tbsp. chopped fresh thyme
• 1 Tbsp. chopped fresh rosemary
• 1 Tbsp. chopped fresh sage
• 1 recipe cooked polenta, to serve 4-6
Cooking Instruction:
• Preheat oven to 375 degrees.
• Cut onion into 8 wedges. Toss the onions, shallots and tomatoes with olive oil and salt and pepper. Spread out on sheet pan. Roast in oven until brown and soft approximately 20-25 minutes. Stirring frequently to brown on all sides.
• In the meantime, brown and cook sausages according to package instructions. Remove from heat and reserve.
• In same pan, sauté chopped onions and garlic, covered, until soft. Add anchovy paste, tomato paste and cook 5 minutes.
• Add wine and simmer until reduced by ½.
• Add beans, with their juice, mix well, season with salt and plenty of black pepper. Simmer 10 minutes and reserve.
• Combine the roasted vegetables with the sausage and any juices. Toss with chopped fresh herbs. Heat through if the vegetables took too long in the oven.
• Line a casserole or individual bowls with soft polenta, spoon over the beans, and add the sausage and vegetables on top
• Serves 4-6
Premio Pesto Chicken Sausage Lentil
Ingredients:
• 14 oz. Premio Pesto Chicken Sausage, removed from casing
• 1 pound dry green lentils, soaked in hot water, at least 15 minutes and drained.
• 2 large leeks, white part only, washed well and cut into 1 inch pieces
• 2 large russet potatoes, washed, peeled and cut in rough, large dice
• 8 cloves garlic, peeled and smashed
• 2 cloves garlic, chopped
• 2 bunches Kale, washed, center rib removed and rough chopped
• 1 cup crushed tomato
• 3-4 cups chicken or vegetable broth
• 1/4-1/2 cup Sriracha, (Thai style pepper sauce), to taste
• Olive oil, salt and pepper
Cooking Instruction:
• In a heavy soup pot, brown sausage meat over high heat, breaking up large pieces. Remove and reserve.
• Add leeks and garlic, cook slowly until wilted.
• Add crushed tomato and 2 cups broth. Add drained lentils, simmer, covered for 45 minutes or until tender
• After 45 minutes add potatoes. Add more stock if needed.
• Saute kale, with chopped garlic, do not overcook. Season and reserve.
• When lentils are cooked; add sausage and juices.
• Season soup with salt and Sriracha to taste.
• Serve with sautéed kale on the bottom of each bowl. Ladle soup over kale and serve
• Serves 8-10
